Chocolate chip cookies are a classic, as classic as Scotch Mints in your grandmother’s pocket or Molasses Kisses in your Halloween bag.
Normally I wouldn’t mess with a good thing, but this time it’s to make this classic extra special; extra melt-in-your-mouth-chewy-delicious special. I’m taking the classic chocolate chip cookie and filling it with a creamy dark chocolate enrobed caramel center! Enjoy!
1 cup butter (softened)
1 cup brown sugar
¾ cup white sugar
1 tsp vanilla
2 ½ cup flour
1 tsp baking soda
2 cups chocolate chips
Kerr’s Sea Salt Caramels
In a large mixing bowl, blend the softened butter with the two sugars.
Add eggs and vanilla to the mixture and blend until the eggs are fully incorporated
Sift the flour and baking soda together in a separate bowl
Slowly add the flour mixture to the butter mixture and stir until fully incorporated
Add chocolate chips to the dough and stir
Cut or slice Kerr’s Sea Salt Caramels in half
Scoop the cookie dough into a ball, and push half of a Sea Salt Caramel in the centre.
Wrap the cookie dough around the caramel so that the caramel is fully covered with the cookie dough.
Place cookie dough ball on a lined baking sheet, keeping approximately 2” between cookies
Bake cookies for 10-12 minutes at 350ᴼ F
